Spring has officially sprung!!

It was actually warm yesterday! Which got me in the mood for a salad, so I thought I’d share a couple of my delicious salad recipes with you today.

One packs a big protein punch for the meat lovers among us and the second is a vegetarian option that includes one of my favourite salad ingredients – beetroot!
