ALMOND PANCAKES: Serves 1-2

Following my Facebook Post that read like ……

This is a pic of what one of my lovely BABEs had for breakfast this morning AND she has lost 6.5 lbs in 5 days – makes you feel sorry for those who have been eating soggy, low cal, low fat, low taste Special K all week and lost 1/2 lb!

I had several unbelieving emails and requests for the recipe.

So here it is, its from my new 30 days of fat loss product!
The recipes in this book are unbelievably tasty! But then thats what you get when 30 of the UK and Ireland’s top fit pros get their heads together!
Enjoy!!

Ingredients

1 cup of Almond Flour (ground almonds)

2 Eggs

3-4 Tbsps coconut milk

1 vanilla pod, split and seeds scraped out

1 Tbsp ground cinnamon

Coconut oil

 

Method:

1) Mix eggs, coconut milk and vanilla in a bowl and whisk together

2) Mix in almond flour and cinnamon

3) Heat a large pan over a medium heat, add a tsp of coconut oil to the pan and add pancake batter in small rounds, quickly turning the pan around to spread the pancake

4) Cook until brown on the underside, about 45 seconds and then flip to brown the other side.

Why not give it a try served with some fresh strawberries like Ieva did?
